On October 17th, the Second China Beverage Raw Materials and Quality Safety Research Institute Science Conference was held in Baoji City, Shaanxi Province. Organized by the China Alcoholic Drinks Association and hosted by Shaanxi Xifeng Liquor Co., Ltd., the event also saw participation from Northwest University, Northwest A&F University, Shaanxi University of Science and Technology, and Dalian Polytechnic University. Experts, representatives from tech companies, and industry elites gathered to discuss the latest advancements and future trends in the flavor technology of Chinese liquor.

During the conference, Baoji City Vice Mayor Li Wufan emphasized the city’s strong focus on developing the liquor industry. He highlighted how Xifeng Group acts as a “leading enterprise” driving the development of the entire supply chain. Since the establishment of the China Beverage Raw Materials and Quality Safety Research Institute at Xifeng Group, there has been ongoing research tackling key issues related to raw materials, flavor health, quality safety, and process innovation, leading to significant achievements. The results of the study on the formation and regulation mechanisms of the characteristic aroma of Xifeng liquor and the formal release of the “Quality Control Guidelines for Xifeng Liquor” will play a vital role in the standardization and quality improvement of Xifeng liquor.

The Chairman of the China Alcoholic Drinks Association and Director of the National Liquor Standardization Technical Committee, Song Shuyu, delivered a keynote speech titled “Grains of Harmony Brewed into Fragrance.” He stated that the association has long been dedicated to promoting systematic research on raw materials, production regions, brewing processes, and flavor profiles. This work not only preserves the essence of traditional Chinese brewing techniques but also clarifies and promotes these techniques through modern technology.

Zhang Zheng, the Party Secretary and Chairman of Xifeng Group, noted that as a key brand and one of Shaanxi Province’s 24 critical industrial chains, Xifeng Group has focused on building three industrial chains and platforms while leading the Shaanxi liquor sector. With a development strategy focused on synergy and innovation, Xifeng Group aims to enhance its high-end product offerings while solidifying its brand identity as a symbol of Chinese cultural heritage. The successful identification of the research project on the aroma formation mechanisms signifies a substantial advancement in the quality of Xifeng liquor.

Academician Zhu Beiwei from the Chinese Academy of Engineering and a professor at Dalian Polytechnic University pointed out that as a vital component of the traditional food industry, liquor stands at a unique crossroads of opportunity and challenge. In light of new circumstances, the research institute will align closely with contemporary trends, integrating new productive forces and leveraging technological innovation to drive the traditional industry towards a transformation emphasizing high-end, intelligent, and green development.

At the event, Yue Tianli, Dean of the School of Food Science at Northwest University, presented research findings on the formation mechanisms and regulation of Xifeng liquor’s characteristic flavors. Feng Yafang, Chief Engineer of Xifeng Co., provided insights into the research institute’s “14678” innovation system framework. Together, Song Shuyu, Li Wufan, Zhu Beiwei, and Zhang Zheng jointly launched the “Quality Control Guidelines for Xifeng Liquor” at the conference.
